Course overview

This is the City & Guilds Level 2 Certificate in General Patisserie & Confectionery. 

Whether you would like to develop your existing skills, improve as a professional chef or increase confidence in your skills at home, this course is for you.

You will cover a broad range of modern professional baking and patisserie. With the guidance of contemporary pastry chefs, you will learn techniques and methods relevant to today’s cooking practices!

With a focus on commercial awareness, enterprise and employment in industry, this is for those of you who are contemplating starting a business of your own.

By achieving this qualification, you have the ability to bake and make desserts like a professional pastry chef. You will train in high quality training kitchens, under the guidance of our experienced chef lecturing team.

During the course, your knowledge will be assessed via practical and written assessments in order to complete the following units in:

  • producing hot and cold desserts and puddings
  • producing biscuit, cake and sponge products
  • producing fermented dough products

 

As a craft based course, underpinned by theory, you will gain industry standard skills. Course content is designed to be aspirational, with demonstrations from our professional industry chefs, who accompany each session.

You will also have the opportunity to delve into both contemporary and classic techniques. On completion of your qualification, you will own a portfolio of a mixture of tasty treats that you’ll make with continuous reviewing.

There are no qualification entry requirements for this course.

This is a part-time course and therefore is not equivalent to full-time education. We require all learners to be above the age of 18 to apply for this learning for leisure course.

 

On completion of this course, you can progress to Advanced Patisserie, where you’ll build on the skills and processes learnt at Level 2. This course is designed to broaden and specialise your repertoire in line with modern patisserie trends.
