Indian Cookery: understanding spices

Course overview

This course will give you a basic understanding of how to use the most common spices and flavour combinations to make your favourite starters, mains and Indian breads.

You will learn how to prepare classic Indian recipes from scratch with local, seasonal produce and time-honoured spices and seasonings. 

You will gain the confidence to cook a main dish, one or two side dishes, and a rice dish and discover the various spices that are utilised in Indian cuisine.

You will need to bring your own apron, oven gloves and tea towels. Please also bring along a pen, and reading glasses (if you use them), in order to read and take notes on the recipes.

It’s crucial to dress and move around appropriately within a crowded, hot kitchen environment. 

Please note that latex/nitrile gloves are not provided by the centre, therefore if you want to wear them, you will need to supply your own.

Face masks are not required.
